COMPLAINANT <br /> EXPERIENCED SICKNESS LATER THAT NIGHT UNTIL 7AM THE FOLLOWING DAY. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:Some of the food handler cards are not available. Provide in 1 week. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. No reported illness by employee. No employees working for other food facility, <br /> daycare or health care facility. Staff consumes food eaten by complainants. No out of the country traveling by employees. <br /> Food safety certificate is valid. Chicken is received breaded and frozen, placed in walk in freezer. When placing order, they <br /> pull the individually packaged breaded frozen meat from the freezer to be fried at 350F for 7 min. By asking the manager, to <br /> fry one piece and check the temp after cooking,temp was at 182F and the middle of the meat piece is fully cooked.All <br /> potentially hazardous food on hot hold is 135F or above and on the cold hold is 41 F or below.All food is frozen in the walk in <br /> freezer. 3 comp sink has QUAT 300 ppm in the sanitizing compartment. High temp dish washer is 160F and facility has temp <br /> strips and QUAT test strips. THey have accurate probe thermometer and in use.
