All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br />OBSERVATIONS: There is no sanitizer available on site at time of inspection. Provide a sanitizer by end of inspection, or <br />the facility will be closed until a sanitizer is obtained. <br />Corrected on site. He is unsure <br />of the source. He states that te shrimp were seasoned at the employee's home. <br />Do not serve the remaining shrimp that is on site today to customers. <br />New shrimp must be purchased from an approved source (grocery store, distributor, etc.) and must be prepared (thawed, <br />seasoned, etc.) on site only. No food preparation may occur elsewhere. <br />Catered prepared food may be brought in from a permitted food facility. <br />CALCODE DESCRIPTION: All food shall be obtained from an approved source. Once received, fax or e-mail a copy to Kadeanne Linhares (klinhares@sjcehd.com) <br />All other employees shall obtain the 3 year Food Handler Card within 30 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination.
