Pinkos
Executive Officer
California Regional Water Quality Control Board
11020 Sun Center Drive, #200
Rancho Cordova, CA 95670-4780
Re: New Restaurant at Olde Lockeford Winery, PA-04-767
Dear Mr. Pinkos:
Olde Lockeford Winery is currently in the permitting phase for the construction of a new
restaurant at the Olde Lockeford Winery property. This will be a small food
establishment serving a Thai cuisine cooked mainly with water and steam. All wash-
water generated from this operation will be collected in the winery process-water system
and shipped to EBMUB under our current permit for disposal. The restaurant will be
opened three days per week, seat fifty people and generate less than two thousand gallons
of wash-water per month. Existing restrooms will handle the domestic waste through
septic tanks and leachfield.
There will be no change in the method of handling our winery wastewater and solids
disposal as described in our current RWD. If you have any questions or need additional
information please call me at (209) 727-9770.
Sincerely
Don ' ch eld
Principal
cc: Mike Huggins, SJ County Health Dept., Stockton
