Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #21 Hot and Cold Potable Water Not Available MAJOR <br /> OBSERVATIONS:There is no hot water in the Bar, the kitchen and prep. area. There is hot water at the dishwasher. The <br /> facility will operate with the dishwasher while the hot water is restored throughout the facility. All utensils must be taken and <br /> washed in the dishwasher. <br /> The hot water must be restored by today and a reinspection must be conducted by today or tomorrow morning. <br /> CALCODE DESCRIPTION:An adequate,protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br /> (113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #6 Handwashing Facilities Supplied and Accessible <br /> OBSERVATIONS: Provide a paper towel dispenser and soap at the handwash station at the bar. Currently the soap <br /> dispenser has sanitizer. Correct by today. <br /> CALCODE DESCRIPTION:Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br /> maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br /> utensils and equipment.(113953, 113953.1, 114067(f)) <br /> #7 Hot and Cold Holding Temperatures <br /> OBSERVATIONS:True refrigerator's thermometer reads 38 F, however the air temperature is at 48 F. Adjust temperature <br /> so that it holds 41 F or below. Correct today. <br /> Monterey jack cheese at 45 F, Cut tomatoes at 47 F, Eggs at 47 F-These products are stored on top of the refrigerator that <br /> also cools the drawers. Chorizo stored in the drawers below is at 47 F. Adjust the unit so that it maintains 41 F or below at <br /> all times.
