SA N J O A Q U I N Environmental Health Department <br /> C0UNTY-- <br /> Food Program Complaint Inspection Report <br /> Facility Name and Address: EDDIE'S PIZZA CAFE, 3201 W BANJAMIN HOLT DR, STOCKTON 95219 <br /> FOOD ITEM--LOCATION --TEMP°F--COMMENTS <br /> No Temperature Data Collected <br /> NOTES <br /> Spoke with the manager about the complaint this department received. 2 adults and a child purchased and consumed <br /> pepperoni pizza, chicken wings and bread sticks. Per manager there were no other complaints received regarding this matter. <br /> Per manager no employees have been sick 2 weeks the alleged complaint or after. The employees don't work at other food <br /> facilities. The employees have not traveled outside the country. Employees are trained in food safety. The manager allowed <br /> me to inspect. <br /> Hand washing provided. Both dishwashers are functioning. See above for other violations........ <br /> Pepperoni pizza is cooked for 6 minutes at 495 F. Cheese is received refrigerated-->stored in walk in cooler 41 F-->moved to <br /> prep. table 41 F-->prepared on pizza and cooked. <br /> Pepperoni is received frozen-->stored in walk in cooler 41 F--->Prep table 41 F for making pizza and cooked.Chicken wings are <br /> received frozen-->stored in walk in cooler 41 F-->portioned some prep-->walk in cooler 41 F-->Prep table 41 F-->cooked for 12 <br /> minutes at 495F on the conveyor oven or 18 minutes if requested crunchy. <br /> Bread sticks received refrigerated-->stored in the walk in cooler at 41 F-->baked and butter and parmesan cheese. <br /> The butter and the parmesan cheese are received refrigerated-->stored in walk in cooler-->taken out in small containers and <br /> left out of temperature control for under 4 hours. <br /> The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br /> Safety Code.
