Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br /> OBSERVATIONS:Spanish rice in a black pot under cooked range was 76 F; staff stated the rice was taken out of <br /> refrigerator this morning at around 9:30am, and will be placed in heat-hold table before serving (measured to be 196 F). <br /> Store potentially hazardous food (PHF)41 F or below or 135 F and above. Observed rice placed back into refrigerator. <br /> Reminded staff the cooked rice after cooling must be reheated to at least 165 F before serving. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45'F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #13 Food Contamination and Adulteration <br /> OBSERVATIONS:Observed a large plastic mixing bowl sitting on top of an uncovered pot of cooked spanish rice in a black <br /> pot; staff stated they use the same bowl for measuring amount of rice for cooking (see violation #7). Immediately remove <br /> bowl, wash and sanitize the bowl after each use, cease storing bowl on top of the rice, and cover rice and any other PHF to <br /> avoid contamination or adulteration. Corrected on site. <br /> CALCODE DESCRIPTION:Any food is adulterated if it bears or contains any poisonous or deleterious substance that may render it <br /> impure or injurious to health. No food containing artificial trans-fat, including oil, shortening, or margarine containing trans-fat may be <br /> stored, distributed, or served by, or used in the preparation of any food within a food facility(113967, 113976, 113980, 113988, 113990, <br /> 114035, 114254(c), 114254.3, 114377) <br /> #22 Disposal of Sewage/Wastewater <br /> OBSERVATIONS:Water from condensation of meat Walk-In and freezer and produce cooler pooled in the back storage <br /> section instead of into the floor drain. Immediately move piping so wastewater can properly drain into the floor drain and <br /> sewer system. <br /> CALCODE DESCRIPTION:All liquid waste must drain to an approved fully functioning sewage disposal system. (114197) <br /> #23 Rodents, Insects or Animals Inside Facility <br /> OBSERVATIONS:Observed one dead cockroach (waterbug) in floor drain by the 2-comp sink, flies around meat <br /> department and kitchen, and 4-5 rodent droppings in the storage room across from employee restroom. Provide more pest <br /> control as needed.
