Provide signed Commissary Letter to EHD before permit can be issued <br /> 2. Water heater must be capable of heating water to at least 120 F, interconnected with a <br /> potable water supply, and operate independent of vehicle engine. (114325 (a) <br /> 3. Compressor units that are not an integral part of food equipment, auxiliary engines, <br /> generators, and similar equipment, must be installed in an area completely separated <br /> from food preparation and food storage while accessible from outside (114322) <br /> 4. Gas-fired equipment shall meet applicable ANSI standards (114301 (d)) <br /> 5. Gas-fired appliances shall be insulated to prevent excessive heat buildup and injury. <br /> (114323 (g) <br /> 6. Electrical appliances shall meet applicable Underwriters Laboratory (UL) standards. <br /> (114301 (d) <br /> 7. Potable and wastewater tanks must be sloped to an outlet that ensures complete <br /> drainage. (114199) <br /> 8. Potable water delivery rate at least one gallon/minute (114217 (e)) <br /> 9. Another wastewater tank is required if ice is used in the storage, display, or service of food <br /> or beverages, with capacity at least 1/3 volume of ice cabinet. (114240 (d)) <br /> 10. Entrance door must be self closing (114303) <br /> 11. Second exit opposite main exit door, or roof, or rear, with at least 24" x 36" of <br /> unobstructed passage. Exit shall be labeled "Safety Exit" in letters at least 1 inch high <br /> (114323 (f)) <br />
