EHD recommends placing PHF in shallow container to meet rapid cooling requirement more readily. <br />Please be aware mobile food preparation unit is required to have mechanical refrigeration and separate water heater with <br />minimum of 4 gallon capacity that can be powered independently of the vehicle engine according to CALCODE.
