Pomace and other grape wastes (skins, seeds, pulp, and stems) from the primary fermentation
process in the winery are placed in bins for off-site disposal. Filter press materials are stored
on-site for eventual tilling into vineyard soil. Yeasts and solids generated in the secondary
fermentation process are washed out of the tanks and either settled in the two-stage clarifier or
pumped to the treatment system.
14. A wastewater pond is located at the north side of the property. It provides approximately 1.5 acres
of surface area. The pond is subdivided into six 0.25-acre areas by berms, and each subarea is
equipped with a wastewater outfall control valve. When these WDRs were prepared, the pond was
being evaluated by the former cherry briner as a source of salinity to the groundwater. These
WDRs prohibit discharge of wastewater, stormwater, or other liquids into the pond until the pond is
formally closed.
15. Because monitoring data for the WildRose Winery are not available, typical winery wastewater
data are presented. Compound concentrations in winery wastewater are the highest during the
crush season, typically in the following ranges:
Compound Units Concentration Range'
pH pH units 2.5 -9.5
Dissolved Oxygen mg/1 0.5 -8.5
Biochemical Oxygen Demand(BOD5)? mg/1 500- 12,000
Chemical Oxygen Demand(COD) mg/1 800- 15,000
Grease mg/I 5 -30
Settleable Solids mg/l 25 - 100
Nonfilterable Residue mg/l 40- 800
Volatile Suspended Solids mg/l 150-700
Total Dissolved Solids (TDS) mg/1 80-2,900
Nitrogen mg/1 1 -40
Nitrate (as Nitrate) mg/1 0.5 -4.8
Phosphorous mg/1 1 - 10
Sodium mg/l 35 -200
Alkalinity(CaCO3) mg/1 40-730
Chloride mg/l 3 -250
Sulfate mg/l 10 - 75
Typical chemical analyses of winery wastewater from Summit Engineering,Process Wastewater
Management System,Design Criteria and Calculations, 5 June 1998.
2 Five-day,20°Celsius Biochemical Oxygen Demand.
C:TP j.FdwkSitaMW R..N .os_dR W k.doc
