For consumer self-service, food shall be protected from contamination by the use <br /> of packaging, counter, service line, or sneeze guards that intercept a direct line <br /> between the consumer's mouth and the food being displayed, containers with tight- <br /> fitting securely attached lids, display cases, mechanical dispensers, or other <br /> effective means. [CRFC §114060(a)]. <br /> 2. Self-service in-use utensils, such as plates, shall be stored in a clean protected <br /> location [CRFC §1141191, and shall not be stored under sources of contamination <br /> location [CRFC §114161]. EHD recommends covering plates during use if the <br /> plates are stacked rightside up, or stack them upside down to prevent food contact <br /> surface from contamination. <br /> 3. The floor surfaces in all food preparation or packaging areas, open food storage <br /> areas, utensil washing areas, refuse storage areas, janitorial areas, and all <br /> restroom and employee change areas, shall be smooth and of durable construction <br /> and nonabsorbent material which is easily cleaned. These floor surfaces shall be <br /> coved at the juncture at the floor and wall with a three-eighths (3/8) inch minimum <br /> radius coving and shall extend up the wall at least four (4) inches. Rubber or vinyl <br /> top set base is not permitted in these areas [CRFC §114268]. <br />
