Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures Major <br /> OBSERVATIONS:The cheese, eggs and sour cream are at 60 in the one to the walk in coolers on the north side of the <br /> store.These products also need to be discarded.The walk in coolers are not maintaining 41 F or below. Currently only non <br /> potentially hazardous foods are being stored inside these units. Do not store potentially hazardous foods in these units unit <br /> they maintain 41 F or below. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM--LOCATION--TEMP°F--COMMENTS <br /> No Temperature Data Collected <br /> NOTES <br /> Per owner all potentially hazardous foods were discarded throughout the store and meat department. <br /> Per owner the electricity was restored on Thursday(8-19-20).The meat was brought in on Saturday(8-22-20). <br /> per owner the building department approve the reopening of the business on 8-19-20. Fire department approve the facility on <br /> 8-24-20. <br /> Per owner a wall was built around the area that was affected by the fire to allow them to open. No food storage or food prep is <br /> conducted in this area. <br /> The food cart outside is permitted for limited food prep only, assembling of food.All food must be prepared and cooked inside <br /> the facility. <br /> Meat department. <br /> The meat cases are at 40 F. Metalfrio reach in is at 41 F water is 120 F at 3 comp sink. <br /> Ok to open the facility.
