3030A215-Mar2008 3130A215-Mar2008 <br />ITEM ACTION RESPONSE <br />1 <br />ENSURE the drain valve lever on the fryer is in the CLOSED <br />position, shortening is at the proper level, then press the <br />ON/OFF key on the Ultrastat 25 Cooking <br />Computer. <br />The Melt Release Temperature is factory set for a HIGH Exit <br />Temperature (135˚F / 57˚C) or a LOW Exit Temperature <br />(75˚F / 24˚C) according to the customers specifications. <br />A. MELT G/P will appear in the display to indicate <br /> the computer is in the SHORTENING MELT <br /> MODE. <br />B. The HEAT DEMAND LAMP on the computer <br /> and the RED Heating Indicator Lamp on the <br /> fryer will cycle ON and OFF indicating the burner <br /> is periodically turned ON and OFF to gently heat <br /> the shortening. <br /> NOTES: 1) The computer will keep the fryer in the MELT MODE until the OK/EXIT key is manually pressed. <br /> 2) The computer CANNOT be taken out of the SHORTENING MELT MODE until the shortening <br /> temperature reaches the MELT RELEASE TEMPERATURE. <br />2 <br />Once the Melt Release Temperature is reached, press the <br />OK/EXIT key to cancel the SHORTENING <br />MELT MODE. <br />A. LOW will appear in the computer display indicat- <br /> ing the shortening temperature is more than 20˚F <br /> (11˚C) below the READY (SET-POINT) temper- <br /> ature. <br />B. The HEAT DEMAND lamp on the computer and <br /> the RED Heating Indicator lamp on the fryer will <br /> cycle ON and OFF until the Set-Point Tempera- <br /> ture is reached. <br />READY The actual shortening temperature is within 20˚F (11˚C) of the (SETPOINT) <br />temperature. <br />LOW The actual shortening temperature is more than 20˚F (11˚C) BELOW the READY <br />(SETPOINT) temperature. <br />HIGH The actual shortening temperature is more than 20˚F (11˚C) ABOVE the READY <br />(SETPOINT) temperature. <br />The actual shortening temperature is ABOVE 420˚F (216˚C). If this occurs the <br />computer will emit a CONTINUOUS ALARM signal. <br />DONE 1-8 Indicates a cook cycle has been completed on a product being cooked by a specific <br />product key, such as DONE 5. <br />PROBE OP <br />Indicates the computer temperature probe is OPEN . When this occurs; <br />1) any cook cycle will be CANCELLED ; 2) heating mechanism will be turned OFF <br />and, 3) normal key presses will be INHIBITED. <br />PROBE SH <br />Indicates the computer temperature probe is SHORTED . When this occurs; <br />1) any cook cycle will be CANCELLED ; 2) heating mechanism will be turned OFF <br />and, 3) normal key presses will be INHIBITED. <br />HIGH TMP <br /> C.
