Gas Fryer Operation & Care Manual • 20 <br />bASIC CONTROL OPERATION <br />Boil Mode <br />CAUTION: THE USER MUST CONSULT AND FOLLOW THE <br />GUIDELINES FOR CLEANING AND BOILING OF THE FRY POTS. <br />The boil function accurately maintains the fryer temperature at 190°F (88°C) to assist in <br />the cleaning of fry vats. To start the boil process, turn the appliance OFF. Empty the fry vat <br />of shortening. Once the vat is emptied of shortening and refilled with cold wate r, the <br />controller and fryer may now go into boil mode. <br />NOTE: The fry vat will maintain a temperature of <br />190°F (88°C) to allow the boil function to be per- <br />formed. <br />To Enter Boil Mode : Press and hold the P key for 3 sec- <br />onds. COUNTS will be displayed. <br />Press the up or down arrow keys until BO IL is displayed, <br />then press the P key. BO IL will be displayed. <br />To Exit Boil Mode , press and hold the P key for 3 sec- <br />onds. COUNTS will be displayed. <br />Press the up or down arrow keys until BO IL is displayed, <br />then press the P key. The controller has now exited boil <br />mode. If unit has an ON/OFF, you can also exit by turn- <br />ing the unit OFF then back ON. <br />The fry vat must be <br />below a temperature <br />of 200°F (93.3°C) to <br />enter the boil mode. <br />bOIL OUT MOdE
