(114135, 114185.1 114185.3(d-e)) <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM--LOCATION--TEMP°F--COMMENTS <br /> walk-in--46.00°F <br /> NOTES <br /> I spoke PIC who was not aware of compliant prior to this investigation. <br /> There have been no sick employees for the last 2 weeks. <br /> Sanitizer bucket is at 100ppm. <br /> I observed walk-in (46F). <br /> I observed proper storage of food items in walk-in. <br /> Chicken and beef come to the facility and are refrigerated. <br /> Beef and chicken are marinated and held in the walk-in for approximately 12 hours and then prepared on griddle. <br /> Chicken on steam table 141 F <br /> Beef on steam table 155F. <br /> Mac salad is prepared by boiling pasta, and pasta is cooled with cool water, pasta is then mixed with mayonnaise and then <br /> immediately placed in the walk-in. <br /> No paper towels were observed at kitchen hand sink when I arrived.
