SAN 10 A Q U I N Environmental Health Department <br /> C:0utINiY <br /> Food Program Complaint Inspection Report <br /> Facility Name and Address: JACK IN THE BOX 486, 920 E HAMMER LN, STOCKTON 95210 <br /> Food items are properly stored. <br /> Lettuce comes to the facility in boxes and is stored in the walk-in (41 F)until washed and cut and placed on the assembly line <br /> or walk-in. <br /> I observed where boxed lettuce and cut lettuce is stored is stored in walk in. <br /> I observed sanitizer buckets. <br /> No sanitizer detected. Provide sanitizer a minimum of 200ppm (quat)in sanitizer buckets. <br /> I observed employee wipe down counter with sanitizer cloth. <br /> I observed wet sanitizer cloths on counters. <br /> Provide wet cloths in sanitizer.l observed buns, lettuce, cheese on assembly line. <br /> Cheese is within 4 hour time, lettuce is within time and jumbo jack meat patty is 169F in hot hold cabinet. <br /> I observed a jumbo jack prepared. Jumbo meat patty is at 173F. <br /> I observed jumbo jack assembled on tray. <br /> Per employees tray is sanitized every 4 hours. <br /> I observed timer and there was approximately 7 minutes left before it was time for employees to wash hands. <br /> During the inspection, I did not hear the alarm sound after timer elapsed. <br /> Per shift lead all employees wash hands when timer alerts them (every 60 minutes)or as needed.
