Repair dish washer and provide chlorine 50 ppm in 1 week. Meanwhile use the 3 <br /> comp sink for manual washing and sanitize with QUAT 200 ppm or more. I coach employee that utensils need to be <br /> washed, rinsed and sanitized properly in the 3 comp sink. <br /> Sanitizer bucket has chlorine 0 ppm. Provide Chlorine 100 ppm or more immediately. Corrected on site. Chlorine is now 100 <br /> ppm. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized.
