Clean filters today and regularly after. <br /> Exterior surfaces of the cooking equipments and cooling units at the cook line, have grease accumulation. Clean these <br /> surfaces today and as needed. <br /> CALCODE DESCRIPTION:All nonfood contact surfaces of utensils and equipment shall be clean. Replace the light box cover or provide <br /> shatterproof shields for light fixtures in 2 weeks. <br /> CALCODE DESCRIPTION:Exhaust hoods shall be provided to remove toxic gases,heat,grease, vapors and smoke and be approved by <br /> the local building department. Canopy-type hoods shall extend 6"beyond all cooking equipment.All areas shall have sufficient ventilation <br /> to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window,an air shaft, or a <br /> light-switch activated exhaust fan,consistent with local building codes. Repair in 1 week. <br /> Pipe, draining the prep sink in the floor sink underneath it, is lacking air gap. Provide air gap minimum 1 inch off the floor <br /> sink in 1 week. <br /> Floor sink, underneath the prep sink, drains slowly. Fix today. <br /> CALCODE DESCRIPTION:The potable water supply shall be protected with a backflow or back siphonage protection device,as required <br /> by applicable plumbing codes.
