<br /> 11.1 Savory Lentil Rice Mix (Khichadi)
<br /> Ingredients: Rice, Split Yellow Lentils, Peppercorns, Cloves, Cinnamon, Cashewnut,
<br /> Dehydrated Ginger, Dehydrated Curry Leaves, Dried Red Chillies, Butter, coarse ground
<br /> Mustard, coarse ground Cumin, Red Chilli Powder, Dehydrated Coriander leaves, Turmeric
<br /> Powder, Asafoetida, Salt
<br /> Method: Wipe rice and lentil with a moist kitchen towel and then sun dry for just an hour. Heat
<br /> Butter in the pan and add the whole spices (peppercorn, cloves, cinnamon) and saute for few
<br /> seconds thea add cumin and mustard, when cumin start crackling then add the cashew nuts,
<br /> whole red chilies, asafoetida, ginger,curry leaves and stir for few seconds. Now add the rice and
<br /> yellow lentil in the pan and saute for about 5 minutes on low heat. Add salt, turmeric and chili
<br /> powder and give a stir and remove from the heat. Let it cool down completely then add the
<br /> dehydrated coriander leaves and mix.

<br /> Dehydrated Curry Leaves, Peanut Powder, Oil, coarse ground Mustard, coarse ground Cumin,
<br /> Bengal Gram Lentils, Black Gram Lentils, Roasted Peanut Powder, Desiccated Coconut,
<br /> Dehydrated Coriander leaves, Asafoetida, Salt
<br /> Method: Heat oil in the and add the Bengal gram lentil and black gram lentil and stir fry till they
<br /> start changing colour. Now add coarse ground mustard, coarse ground cumin, broken cashew
<br /> pieces and asafoetida. When mustard starts crackling then add dehydrated green chili, ginger,
<br /> coriander mix and stir for a few seconds. Now add semolina and saute on low flame for 5-7
<br /> minutes. Keep stirring it. Add roasted peanut powder and desiccated coconut and roast for a
<br /> couple of minutes. Switch off the flame and add salt and mix.
