Festive Bites <br /> Method: Dry roast puffed Rice on medium flame and roast it until it turns crisp. Let it cool. In a <br /> large skillet, heat oil and fry peanuts, cashew, roasted bengal gram and dry coconut until <br /> golden. Now add mustard, coarse ground cumin, red chilli, asafoetida and curry leaves. Saute <br /> and splutter the tempering. Add turmeric, salt and powdered sugar. Mix roasted thin beaten rice <br /> and mix gently. <br /> 3.3 Savory Fox Nuts Makhane ka Chiwda <br /> Ingredients: Fox nuts (Makhana), oil, Salt, Turmeric, Chaat Masala (contains cumin powder, <br /> turmeric, coriander powder, fennel powder, dried mango powder, black salt powder, black <br /> pepper powder, asafetida powder, ginger powder, dried mint powder and carom powder) <br /> Method: Dry roast the Fox nuts on a low flame until they just start to change color. Add oil and <br /> mix until it is absorbed. Add salt, pepper, chaat masala, and turmeric powder. Mix to coat all fox <br /> nuts in the spices. <br /> 4. Fried or Baked Donuts and Waffles <br /> 4.1 Donut Bites {Shankarpalli) <br /> Ingredients: All purpose flour/wheat flour, oil, Butter, milk, sugar, salt <br /> Method: Add Butter, milk and sugar to a saucepan. Cook on low heat, stirring occasionally <br /> until the sugar completely dissolves. Allow to cool. In a mixing bowl add wheat and/or all <br /> purpose flour and salt. Gradually add the cooled milk mixture to form a soft dough. Allow <br /> the dough to rest for 20 minutes. Divide the dough into parts and knead each part to form a <br /> round ball. Take one dough ball at a time and roll into a circle. Cut into 1 inch squares or <br /> diamonds using a knife, pizza cutter. Heat oil in a frying pan on medium heat. Add the cut <br /> squares and fry them until golden brown. Allow them to completely cool on a large baking <br /> tray. <br /> 4.2 Savory Donut Bites (Namkeen Shankargali) <br /> Ingredients: Wheat flour, semolina, oil, coarse ground carom powder, coarse ground <br /> peppercorn, salt <br /> Method: In a large mixing bowl take wheat flour and Semolina. Add coarse ground carom <br /> powder and coarse ground peppercorn along with salt. Mix well. Heat Oil and pour over the <br /> flour. Crumble the oil with dough well and rub with your hands. Add water slowly and start <br /> to knead the dough until it forms a stiff and tight dough. Divide it into equal sized balls. <br /> Take one dough ball at a time and roll into a circle. Cut into 1 inch squares or diamonds <br /> using a knife, pizza cutter. Heat oil in a frying pan on medium heat. Add the cut squares and <br /> fry them until golden brown.
