All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Large container with sugar lacks tight lid. Provide at all times. <br />There is an open bag of white sugar at dry storage. Once bags are opened, food shall be stored in sealed containers. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. Due to COVID-19 this activity is no longer <br />allowed. All pastries or bread shall be packaged or an employee shall conduct this activity for the customers. <br />CALCODE DESCRIPTION: Unpackaged food shall be displayed and dispensed in a manner that protects the food from contamination. <br />(114063, 114065) <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: Hard to reach floors in dry storage room has caked on debris. Several large shelves need more <br />cleaning. Clean by 1-2 weeks and as needed. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean. (114115 (c)) <br /> #35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: Food press at bakery dept has caked on debris. Detail clean, daily. <br />Tall racks in Bakery walk in cooler (for pastries) are not clean and some are falling apart. Some racks lack covers. Provide <br />covers for all racks. Clean or replace covers. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175).
