Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br /> OBSERVATIONS:The high heat dish machine is not reaching 160F at the final rinse(machine was run 4 times). <br /> The digital display on the machine read up to 192F, but inspector's thermometer only reached 158F.The thermolabels did <br /> not indicate a final rinse temp of 160F minimum. <br /> All warewashing of dishes, utensils, and equipment shall occur manually at the 3 comp sink using the wash-rinse-sanitize-air <br /> dry procedure until the dish machine is restored to proper function. <br /> Recommendation: obtain some thermolabels for the facility. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized.
