Time In: 10:30 am <br /> Time Out: 11:30 am <br /> COMPLAINT INSPECTION REPORT <br /> Name of Facility: DENNYS RESTAURANT#6620 Date: 12/29/2020 <br /> Address: 3950 E WATERLOO RD,STOCKTON 95215 <br /> Owner/Operator: ELK LAGUNA INC Telephone: (209)931-1622 <br /> Program Element: 1600-FOOD PROGRAM Complaint#: C00053194 <br /> Responsible Party: <br /> DESCRIPTION OF COMPLAINT ALLEGATIONS <br /> The San Joaquin County Environmental Health Department received the following complaint: <br /> COMPLAINANT ALLEGES ON 12/25,THEY OBSERVED A BUS GIRL DROP A TOWEL ON THE FLOOR THEN PICK IT <br /> UP TO WIPE A TABLE AND SEAT GUESTS.THEY ALSO OBSERVED ANOTHER SERVER DROP CREAMER ON THE <br /> FLOOR, KICK IT AGAINST THE WALL BY THE REGISTER AND THEN PICK IT UP AND PUT IT IN A BOWL TO SERVE <br /> TO GUESTS.COMPLAINANT ASKED TO SPEAK WITH A MANGER AND WAS TOLD THERE WERE NONE <br /> AVAILABLE. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #24 Person in Charge Present or Performing Duties <br /> OBSERVATIONS:Upon arrival,staff admitted that a manager is not on site during the time of the inspection.A manager of <br /> person in charge must be on site at all times during operational hours.Correct immediately. <br /> CALCODE DESCRIPTION:A person in charge shall be present at the food facility during all hours of operation. (113945-113945.1, <br /> 113984.1, 114075) <br /> #40 Proper Use and Storage of Wiping Cloths <br /> OBSERVATIONS:Observed wiping clothes not being placed back into the sanitizer bucket in the waitress station. Keep and <br /> maintain all wiping clothes inside of the sanitizer bucket if not in use. Corrected on site. <br /> CALCODE DESCRIPTION:Wiping cloths used to wipe service counters,scales or other surfaces that may come into contact with food <br /> shall be used only once unless kept in clean water with sanitizer. (114135, 114185.1 114185.3(d-e)) <br /> #45 Floors,Walls, Ceilings; Clean and Maintained <br /> OBSERVATIONS:Observed debris build in in multiple locations along the chefs line. Clean and sanitize as much as <br /> possible in order to maintain cleanliness.Correct immediately. <br /> CALCODE DESCRIPTION:The walls/ceilings shall have durable,smooth,nonabsorbent,light-colored,and washable surfaces. All floor <br /> surfaces,other than the customer service areas,shall be approved,smooth,durable and made of nonabsorbent material that is easily <br /> cleanable.Approved base coving shall be provided in all areas,except customer service areas and where food is stored in original <br /> unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
