If food is cooling down, ok to keep uncovered, but once it is 41 F, cover container. <br /> Several food in dry storage room is on the floor.All food shall be 6 inches from floor. Ok to store bottles/cans on floor. <br /> CALCODE DESCRIPTION:Food shall be stored in approved containers and labeled as to contents.
