Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:The associates on site still do not possess a food safety certificate or food handler cards at this. The <br /> facility operator stated that an instructor has been called to instruct the staff on site but has not arrived. Obtain a food safety <br /> certificate and food handler cards for staff on site and provide copies to Victor Acevedo(vmacevedo@sjgov.org)within 60 <br /> days. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. (113947)Food facilities that prepare,handle or serve non-prepackaged potentially hazardous food,shall have an <br /> employee who has passed an approved food safety certification examination. (113947-113947.1)Any food handler hired after June 1, <br /> 2011 shall obtain a Food Handler Card within 30 days(113948). <br /> #8 Use of Time as a Public Health Control <br /> OBSERVATIONS:Observed a time log for today's prepared food items but no other days were presented or observed <br /> being monitored using a time log.All prepared food items must be monitored with a written time log and disposed of after 4 <br /> hours time. Implement procedure immediately. <br /> CALCODE DESCRIPTION: When time only,rather than time and temperature is used as a public health control,records and <br /> documentation must be maintained(114000) <br /> #36 Equipment/Utensils/Linens: Proper Storage/Use <br /> OBSERVATIONS:Observed the ice scoop being stored inside of the hand washing sink of the meat department. Remove <br /> and store the ice scoop inside of a cleanable container with the handle facing upwards when not in use. Correct today. <br /> CALCODE DESCRIPTION:All clean and soiled linen shall be properly stored non-food items shall be stored and displayed separate from <br /> food and food-contact surfaces.
