#45 Floors, Walls, Ceilings; Clean and Maintained <br />OBSERVATIONS: The walls behind the cooking equipment have grease accumulation. Degrease, clean, and sanitize the <br />wall by 2 weeks. <br />The walls by the food prep area (by the two food prep sinks) have splatter and food debris. Clean and sanitize the walls <br />today. <br />Floors have food debris. Clean floors to remove food debris. <br />CALCODE DESCRIPTION: The walls / ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor <br />surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br />cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original <br />unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair. Per MOD, to his knowledge, the facility does not currently have an issue <br />with cockroaches. MOD states that the facility is serviced monthly by Ecolab for pest control. <br />Observed invoices from Ecolab dated 3-3-21, 2-4-21, and 1-13-21. Service date 3-3-21 had no findings; while service dates <br />2-4-21 and 1-13-21 found roaches at the sushi bar. <br />During this date's inspection, two live cockroaches (one adult and one juvenile) were observed at the shelving above the two <br />food preparation sinks. One dead cockroach was observed at this area. One dead cockroach was observed at the sushi bar. <br />A re-inspection will occur in 3 weeks (on or after 4-27-21) <br />No signature obtained / COVID-19 <br />Report typed at the office 4-7-21 7:37-7:54am <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
