COMPLAINT INSPECTION REPORT <br />11:01 am <br />10:43 am <br />Time Out: <br />Time In: <br />Environmental Health Department <br />Name of Facility: PANERA BREAD #1940 Date: 07/26/2021 <br />Address: 2512 NAGLEE RD, TRACY 95304 <br />Owner/Operator: PANERA LLC Telephone: (314) 984-1000 <br />Program Element: 1600 - FOOD PROGRAM Complaint #: CO0054027 <br />Responsible Party Contact: <br />DESCRIPTION OF COMPLAINT ALLEGATIONS <br />The San Joaquin County Environmental Health Department received the following complaint: <br />CO0054027 states: "COMPLAINANT ORDERED A CINNAMON CRUNCH BAGEL ON 7/13/21. WHEN COMPLAINANT <br />BEGAN EATING BAGEL, THEY NOTICED SOMETHING HARD, THEY TOOK IT OUT THEIR MOUTH AND IT WAS A <br />PIECE OF METAL." <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />OVERALL INSPECTION NOTES AND COMMENTS <br />No Temperature Data Collected <br />FOOD ITEM -- LOCATION -- TEMP º F -- COMMENTS <br />NOTES <br />Manager on Duty (MOD) is aware of the complaint. Per MOD, a customer incident report was filled out. <br />Per MOD, bagel dough arrives to the facility in metal transport cabinets (un-proofed, un-cooked). The dough is stored in the <br />transport cabinets on metal sheet pans in the walk-in cooler until demand requires it. The sheet pans are sent back to <br />distribution for warewashing. <br />The dough is pinched and a scoop of cinnamon/sugar is added to the top of the bagel with a metal scoop. The <br />cinnamon/sugar mixture is stored in a plastic covered Cambro.
