(113947-113947.1)Any food handler hired after June 1, <br /> 2011 shall obtain a Food Handler Card within 30 days(113948). <br /> #39 Thermometers Provided/Accurate/Easily Visible <br /> OBSERVATIONS:Observed the 2-door Traulsen cooler without a thermometer placed inside of it to monitor the cooling <br /> temperature.Obtain and maintain inside of the cooler to ensure proper cooling temperature is at 41 F or below at all times. <br /> Correct within 7 days. <br /> CALCODE DESCRIPTION:An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br /> available to the food handler. A thermometer+/-2#F shall be provided for each hot and cold holding unit of potentially hazardous foods <br /> and high temperature warewashing machines.(114157, 114159) <br /> #45 Floors,Walls,Ceilings;Clean and Maintained <br /> OBSERVATIONS:Observed file damage in the kitchen that is in need of repair and areas leading into the preparation area <br /> with wood-based coving.The coving will need to be replaced with tile-based or another approved coving material. <br /> Corrections must be made before permit can be issued to the operator. <br /> Observed multiple holes,dime-sized or smaller,on the walls throughout the facility.Seal,fill or patch all holes to ensure the <br /> food preparation area is completely enclosed.Correct before operation. <br /> CALCODE DESCRIPTION:The walls/ceilings shall have durable,smooth,nonabsorbent,light-coloned,and washable surfaces. All floor <br /> surfaces,other than the customer service areas,shall be approved,smooth,durable and made of nonabsorbent materiel that is easily <br /> cleanable.Approved base coving shall be provided in all areas,except customer service areas and where food is stored in original <br /> unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
