All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#1 Demonstration of Knowledge <br />OBSERVATIONS: Food safety exam had been taken. Provide this department with a copy of the certificate within 60 days. <br />All other employees must obtain a food handler card with 30 days of employment and maintain copies at the facility. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non -prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br />#40 Proper Use and Storage of Wiping Cloths <br />OBSERVATIONS: Provide a container with sanitizer for the wiping cloths used more than once when operating. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer. (114135, 114185.1 114185.3 (d -e)) <br />#62 Not in Compliance with Commissary Requirements <br />OBSERVATIONS: Provide this department with a commissary agreement prior to issuing a permit. <br />CALCODE DESCRIPTION: 1. The mobile food facility fails to operate in conjunction with a commissary a mobile support unit. <br />[§114295(a)] 2. The mobile food facility is not stored in a location approved by the enforcement agency. [§114295(c)] 3. Mobile support <br />unit is not operated out of a commissary. [§I 14295(d)] <br />#64 Lack of Proper Owner Identification <br />OBSERVATIONS: Provide the following on both side of the vehicle. <br />Name of the owner in 1 inch letter minimum. <br />City, State and Zip code 1 inch letter minimum. <br />CALCODE DESCRIPTION: 1. The business name or the name of the operator, city state and ZIP code, and the name of the permittee if <br />different from the business name is not clearly visible on the customer side of the mobile food facility. [§ 114299(a)] 2. Business or <br />operator name is not at least 3 inches high and address is not one inch high. [§114299(b)] 3. Sign is not in contrasting color with the <br />vehicle exterior. [§ 114299(b)] 4.
