Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Bottle with vinegar lacks cap. Saw a couple of opened bags of food. Protect food. Place cap back on <br />bottles and once bags are open, store contents inside sealed and labeled containers. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. Clean by 2 days and as needed. <br />Mop sink has layer of dirt. Clean after it is used. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean. (114115 (c)) <br /> #39 Thermometers Provided/Accurate/Easily Visible <br />OBSERVATIONS: Probe thermometer is damaged. Replace by 2 days. <br />CALCODE DESCRIPTION: An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br />available to the food handler. A thermometer +/- 2 #F shall be provided for each hot and cold holding unit of potentially hazardous foods <br />and high temperature warewashing machines. (114157, 114159) <br /> #45 Floors, Walls, Ceilings; Clean and Maintained <br />OBSERVATIONS: Floors and walls need detail cleaning. Detail clean by 1 week and on a routine basis. <br />CALCODE DESCRIPTION: The walls / ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor <br />surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br />cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original <br />unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
