All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Food safety certificate not available during inspection. Provide certification within 60 days and maintain <br />record on site. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. Discontinue practice and <br />wash, rinse, and sanitize bakery equipment in the 2 comp sink. Observed egg nog container in meat <br />display next to raw meat. Store raw meat separately or under other food products to protect from contamination. Correct <br />immediately. <br />Observed uncovered food items in meat walk-in. Cover food items immediately to protect from contamination. <br />Observed dirty meat grinder in the meat walk-in, it was stored on an rusted stand. Clean grinder between uses and when <br />changing meats. Correct today.
