Per operator they had just <br /> placed the food in the steam table less than 30 minutes ago. Per operator this was due to the propane tank being frozen and <br /> said that it takes a while to heat up. Maintain potentially hazardous food at 135 F or above for hot holding.Verify that steam <br /> table is 135 F or above with probe thermometer prior to placing PHF in steam table. Corrected on site, came back after 1 <br /> hour and the carne asada was 136 F and the steam table was 171 F. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:Lacking food handler card for employee. Provide food hander card within 30 days. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties.
