All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br />OBSERVATIONS: The 2 dr reach-in at the Chinese Kitchen was 50 F. Per manager the food was just moved from the <br />walk-in to the reach-in less than 1 hour prior. The shrimp in the reach-in was 40 F. Corrected on site, the food from the 2 dr <br />reach-in was placed back into the walk-in. Provide 41 F or below prior to storing potentially hazardous foods inside this <br />cooler. <br />The Chinese Kitchen walk-in was 43 F. Provide 41 F or below today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: The paper towel dispensers at the produce 2 comp sink and meat department 2 comp sink were empty. <br />Provide paper towels in dispensers today. <br />The soap dispensers at the meat department 2 comp sink and bakery hand sink were empty. A temporary pump soap bottle <br />was being used at the bakery hand sink. Provide soap in dispensers today. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #8 Use of Time as a Public Health Control <br />OBSERVATIONS: Time was being used as a public health control for the pot sticklers, chicken pieces, egg rolls, and spring <br />rolls. A time log was provided for the chicken pieces and both rolls but the pot sticklers were not on the log.
