Time In: 2:10 pm <br /> Time Out: 3:10 om <br /> Food Program Complaint Inspection Report <br /> Name of Facility: CAPTAIN CRAB Date: 01/05/2022 <br /> Address: 2702W MARCH LN, STOCKTON 95207 <br /> Owner/Operator: CAPTAIN CRAB INC Telephone: (209)465-8888 <br /> Program Element: 1600-FOOD PROGRAM Complaint#: C00054567 <br /> DESCRIPTION OF COMPLAINT ALLEGATIONS <br /> The San Joaquin County Environmental Health Department received the following complaint: <br /> COMPLAINANT ORDERED SHRIMP AND CRAB FROM THIS FACILITY ON 1/1/22 AND PICKED IT UP AT 11:32 AM. <br /> COMPLAINANT STATES THAT THE SHRIMP WAS NOT COOKED THOROUGHLY. COMPLAINANT BEGAN TO FEEL <br /> NAUSEA LATE IN THE EVENING OF 1/1. IN THE EARLY MORNING OF 1/2/22, COMPLAINANT BEGAN <br /> EXPERIENCING VOMITING AND DIARRHEA AND HAS CONTINUED TO HAVE THESE SYMPTOMS AT THE TIME OF <br /> THE COMPLAINT. COMPLAINANT'S BOYFRIEND CONSUMED SHRIMP AND ALSO EXPERIENCED DIARRHEA AS <br /> WELL. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization Major <br /> OBSERVATIONS:The dish washer is not dispensing any sanitizer. Use the 3 comp sink to sanitize dishes until this is <br /> repaired.The dispenser for the 3 comp sanitizer is not working either.Add sanitizer manually to the 3 comp sink. The <br /> sanitizer must be at a concentration of 700 ppm acetic acid. Chlorine sanitizer test strips are not available for the dish <br /> washer. Provide by 2 days. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized. Provide by 30 days. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. (113947)Food facilities that prepare,handle or serve non-prepackaged potentially hazardous food,shall have an <br /> employee who has passed an approved food safety certification examination. (113947-113947.1)Any food handler hired after June 1, <br /> 2011 shall obtain a Food Handler Card within 30 days(113948). <br /> #30 Food Storage/Display Properly Labeled <br /> OBSERVATIONS:Some vegetable are being stored under some shrimp and other seafood containers. Store vegetables <br /> above raw meat products. <br /> CALCODE DESCRIPTION:Food shall be stored in approved containers and labeled as to contents.
