<br />OBSERVATIONS: The dishwasher was leaking from top and bottom. Observed trays of water near dishwasher.
<br />Discontinue using dishwasher and provide manual warewashing in 2 comp sink until leak is fixed if dishwasher will be used
<br />in the future or continue manual warewashing if dishwasher will no longer be used. For manual warewashing in 2 comp sink
<br />proper procedure is as follows, first food debris from utensils/equipment is scraped into a refuse receptacle. Next utensils
<br />are washed in the the wash compartment of the sink with a detergent solution with the water being 100 F minimum. After
<br />washing utensils are immersed in the rinse compartment that is filled with warm clean water. Next place utensils on clean
<br />drainboard after rinsing and fill a clean compartment with minimum 100 ppm chlorine sanitizing solution and submerge
<br />utensils in the sanitizing solution for 30 seconds minimum. Air dry utensils in a clean location after sanitizing. Correct today.
<br />Observed grease build up on exhaust hood. Clean within 1 week and maintain clean.

<br />surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily
<br />cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original
