#41 Plumbing Maintained; Approved Back Flow Device <br />OBSERVATIONS: Cooked food department hand sink is leaking on the floor. Fix leakage today. <br />CALCODE DESCRIPTION: The potable water supply shall be protected with a backflow or back siphonage protection device, as required <br />by applicable plumbing codes. (114192) All plumbing and plumbing fixtures shall be installed in compliance with local plumbing <br />ordinances, shall be maintained so as to prevent any contamination, and shall be kept clean, fully operative, and in good repair. Any hose <br />used for conveying potable water shall be of approved materials, labeled, properly stored, and used for no other purpose. No employees working for other food facilities, day care or health care facilities. Valid food <br />manager certificate ( expires 10/22/2025). Staff consuming food eaten by complainant. No out of the country traveling by <br />employees. <br />Raw chicken is received at 41F and stored in walk in cooler that is at 40F during my inspection. Chicken is pulled from the <br />walk in cooler to be marinated and cooked in oven at 400F then placed on hot hold that is at 136F to be sold. Facility has an <br />accurate calibrated probe thermometer. Sanitizer bucket is set up with QUAT 300 ppm at the back and front prep areas. <br />QUAT test strips are available on site. I don't smell any spoilage smell from roasted chicken, held on the hot hold, during my <br />inspection. Hand wash station, in cooked food department has temp at 103F fully supplied with soap and paper towels from <br />dispensers.Raw chicken boxes are stored in specific area in walk in cooler, 6 inches off the floor, away from other food items <br />( no potential source of contamination). Facility is providing gloves to employees to handle food during preparation or service. <br />Facility is dedicating one or two employees for POS check out and other employees for food service. I observe one employee <br />washing hands between tasks. Chemicals are stored away from the food prep and food storage areas. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
