Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #23 Rodents, Insects or Animals Inside Facility <br /> OBSERVATIONS:Observed one live adult German cockroach (on a bottle on the dry goods storage area shelf),two dying <br /> adult cockroaches on the floor by the back of the house hand sink and several dead juvenile cockroaches(at the unused <br /> cooking wok station covered in aluminum foil and in the unused large mixer bowl). Employee killed the live adult. <br /> Immediately clean up all dead and dying roaches. No roaches were observed at food contact surfaces this date. Clean and <br /> sanitize affected areas today(remove aluminum foil and clean the mixer bowl). <br /> The most recent Ecolab date of service(observed service report)was 1-25-2022 (no service has been obtained since the <br /> routine inspection). Per employee, Ecolab is coming Monday. <br /> Maintain any new service reports from your pest control provider on site and available for review at 2nd re-inspection. <br /> CALCODE DESCRIPTION:Each food facility shall be kept free of vermin:rodents(rats,mice), cockroaches,flies.(114259.1, 114259.4, <br /> 114259.5) <br /> #40 Proper Use and Storage of Wiping Cloths <br /> OBSERVATIONS:No wiping cloth bucket was observed. Store wiping cloths in a bucket with a sanitizing solution (100 ppm <br /> Cl minimum). Correct today. <br /> CALCODE DESCRIPTION:Wiping cloths used to wipe service counters,scales or other surfaces that may come into contact with food <br /> shall be used only once unless kept in clean water with sanitizer.
