All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: The hand sink at the waitress station lacked soap and paper towels in a dispenser. Install a paper towel <br />dispenser and maintain stocked and in good working order at all times. Stock soap at the hand sink. (113996, 113998, <br />114037, 114343(a)) <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: Observed a ham submerged in water in the prep sink with no running water. Thaw food items under <br />refrigeration, completely submerged under cold running water, in the microwave oven or during the cooking process. Correct <br />today. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br />to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: The hood and filters were observed with dust and grease build-up in the kitchen, over the pizza oven and <br />the wood fire grill. Clean hood/filters within one week. Maintain clean. <br />Plastic shelf liners in the dry storage room were observed with food debris. Clean shelf liners within two days. Maintain <br />clean. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean.
