All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: Observed frozen package of chicken noodle soup submerged in warm water in the prep sink. Provide <br />approved thawing method such as submerged under cold running water or refrigeration. Corrected on site, it was <br />submerged under cold running water. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br />to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed uncovered veggie patties in walk-in freezer. Cover food items immediately to protect food from <br />contamination. <br />Observed debris on ice chute and soda nozzles at soda machine. Clean today and maintain clean. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. Repair leak within 1 week. <br />The 3 comp sink switch handle from faucet to hose was missing, per owner it was back ordered. Provide handle within 2 <br />weeks. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards. Provide 200 ppm quat <br />minimum sanitizing solution in sanitizer buckets. Corrected on site, sanitizer buckets were 300 ppm quat. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer.
