Clean and sanitize the interior deflector plate of <br />the ice machine by 1 week. <br />The condenser fan covers in the walk-in cooler have dust accumulation. Clean and sanitize the fan covers by 2 weeks. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175).
