SAN JOAQUIN <br />COUNTY- <br />Greatness grows <br />Environmental Health Department <br />Time In: 9:50 am <br />Time Out: 10:30 am <br /> <br />COMPLAINT INSPECTION REPORT <br />Name of Facility CAMBODIAN RESTAURANT Date: 04/06/2022 <br />Address: 8046 WEST LN, STOCKTON 95210 <br />Owner/Operator NGOEUM, NAVY Telephone: (209) 952-8030 <br />Program Element: 1624- RESTAURANT/BAR 21-50 SEATS Complaint #: C00054796 <br />Responsible Party Contact: <br />DESCRIPTION OF COMPLAINT ALLEGATIONS <br />The San Joaquin County Environmental Health Department received the following complaint: <br />COMPLAINANT WAS AT FACILITY ON 4/4/2022, AROUND 9 AM. HE ORDERED STEAMED RICE AND BEEF STICKS. <br />WHEN FOOD ARRIVED, RICE WAS COLD. (THIS HAS HAPPENED BEFORE THAT FOOD IS PARTIALLY COLD WHEN <br />RECEIVED). COMPLAINANT ALSO STATED THE BEEF TASTED OFF AND ALWAYS TASTES DIFFERENT EACH TIME <br />IT IS ORDERED. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#7 Hot and Cold Holding Temperatures Major <br />OBSERVATIONS: Observed sausages being dried at room temp from shelf. Per manager they had just placed the <br />sausages there. Discontinue drying meat at room temperature without permit from state, keep potentially hazardous foods <br />at 41 F or below when not being prepped. Corrected on site, sausages were placed in refrigerator. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F orator above 135°F. (113996, 113998, <br />114037, 114343(a)) <br />#8 Use of Time as a Public Health Control <br />OBSERVATIONS: Observed packaged sticky rice at front counter. Per manager it was placed there at 9 AM but no time log <br />or documentation was available. Let manager know that when time is used as the public health control then documentation <br />must be maintained and 4 hour max hold time can not be exceeded.
