Corrected on site, sliced tomatoes were discarded and sour cream were discarded. Provide prep <br /> reach-in cooler unit for toppings within 2 weeks and email evidence to dafonskaia@sjgov.org <br /> The beef, pork skin, and beans at the steam table were 124 F, 124 F, and 132 F respectively. Per owner they were place <br /> there around 8 AM. Maintain 135 F or above at all time for hot holding. Corrected on site, owner turned up steam table <br /> settings. Temperatures for beef, pork skin, and beans at the end of the inspection were 141 F, 137 F, and 144 F. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F.
