Environmental Health Department <br />Facility Name and Address: WALMART #1554, 3223 E HAMMER LN, STOCKTON 95212 <br />Food Program Official Inspection Report <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: The bakery 3 comp sink sanitizer dispenser was empty, no warewashing was being done during the <br />inspection. Provide 200 ppm quat minimum when warewashing in sanitizer compartment. Corrected on site, the sanitizer <br />bag was replaced and it provided 300 ppm quat. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. (113984(e), 114097, <br />114099.1, 114099.4, 114099.6, 114101 (b-d), 114105, 114109, 114111, 114113, 114115 (a, b, d), 114117, 114125(b), 114135, 114141) <br /> #21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: The water at the following nonadjustable hand sinks were either below 100 F or above 108 F: <br />- deli near 3 comp sink 112 F <br />- deli near walk-in freezer 114 F <br />- bakery near 3 comp sink 96 F <br />- meat prep near walk-in 98 F <br />- front women's restroom - 84 F <br />- back womens and men's restrooms 96 F <br />Provide warm water between 100-108 F at all nonadjustable hand sinks today. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #30 Food Storage/Display Properly Labeled <br />OBSERVATIONS: Observed crates containing meat packages stored on floor in meat walk-in freezer and observed box on <br />Jello on floor in A19. Store all food items at least 6 in. above floor. Correct today. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving.
