Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br /> OBSERVATIONS:Observed employee not sanitizing utensils when warewashing,there was no sanitizer/bleach available <br /> on site.Went over proper warewashing method with employee and owner. Utensils must be washed with warm water <br /> 100-110 F and detergent,then rinsed, then submerged in sanitizing solution with at least 100 ppm chlorine for at least 30 <br /> seconds, and lastly air dried. Corrected on site, bleach was obtained and the sanitize compartment of the 3 comp sink was <br /> set up with 100 ppm chlorine. <br /> The sanitizer bucket did not have any sanitizer. Provide sanitizing solution of 100 ppm chlorine minimum in sanitizer bucket. <br /> Corrected on site, it was 100 ppm chlorine. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized. Provide working <br /> paper towel dispensers today. <br /> CALCODE DESCRIPTION:Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br /> maintained in good repair. Provide approved <br /> thawing method such as submerged under cold running water or refrigeration.
