Maintain clean. <br /> CALCODE DESCRIPTION:All nonfood contact surfaces of utensils and equipment shall be clean. (114115(c)) <br /> #39 Thermometers Provided/Accurate/Easily Visible <br /> OBSERVATIONS:A thermometer was lacking inside the two door keg reach-in cooler. Provide a thermometer for the <br /> cooler and place in an easily visible location inside. Correct within 14 days. <br /> CALCODE DESCRIPTION:An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br /> available to the food handler. A thermometer+/-2#F shall be provided for each hot and cold holding unit of potentially hazardous foods <br /> and high temperature warewashing machines. (114157, 114159) <br /> #40 Proper Use and Storage of Wiping Cloths <br /> OBSERVATIONS:A wiping cloth was observed inside the one door Atosa prep top reach-in cooler under food items. <br /> Remove wiping cloth as it is not a cleanable surface to protect food prep and storage areas from contamination.This was <br /> corrected on site. <br /> CALCODE DESCRIPTION: Wiping cloths used to wipe service counters,scales or other surfaces that may come into contact with food <br /> shall be used only once unless kept in clean water with sanitizer. (114135, 114185.1 114185.3(d-e)) <br /> #41 Plumbing Maintained;Approved Back Flow Device <br /> OBSERVATIONS:The hand sink in the kitchen was observed leaking from the bottom of the sink. Repair sink so that it is <br /> in good working order. Correct within two weeks. <br /> The three compartment sink was observed with the metal on the top lifting up. Repair three compartment sink so that it is <br /> smooth and cleanable. Correct within two weeks. <br /> The three compartment sink at the bar was observed with a loose faucet. Repair faucet so that it is in good working order. <br /> Correct within two weeks. <br /> CALCODE DESCRIPTION:The potable water supply shall be protected with a backflow or back siphonage protection device,as required <br /> by applicable plumbing codes. (114192)All plumbing and plumbing fixtures shall be installed in compliance with local plumbing <br /> ordinances, shall be maintained so as to prevent any contamination,and shall be kept clean,fully operative,and in good repair. Any hose <br /> used for conveying potable water shall be of approved materials,labeled,properly stored,and used for no other purpose.
