Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The 2 dr prep Continental reach-in in the food court was not working so the smoothie mix and berry <br />topping are kept in ice tray inside the prep top temporarily until the new unit arrives. The berry topping was 45 F. Maintain ice <br />level to keep food items at 41 F or below. More ice was added to ice tray during the inspection. <br />The produce walk-in was 43 F and the dairy walk-in was 42 F. Provide 41 F or below today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: The sanitize compartment in the food court 3 comp sink had 150 ppm quat. Provide 200 ppm quat <br />minimum sanitizing solution. Corrected on site, it was 300 ppm quat. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized.
