Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures <br /> OBSERVATIONS:4 D Delfield cooler has temp at 47F. Provide 41 F or below today.All food items in this units are moved to <br /> the walk in cooler till temperature is corrected. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. Cheese is discarded voluntarily by the person in charge and new batch is placed with the 4 hours <br /> time control sticker. Corrected on site. <br /> CALCODE DESCRIPTION:When time only,rather than time and temperature is used as a public health control,records and <br /> documentation must be maintained(114000) <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM--LOCATION--TEMP°F--COMMENTS <br /> 4 D Delfield cooler--47.00°F Walk in cooler--41.00°F <br /> COMMENTS AND OBSERVATIONS <br /> Complaint inspection. <br /> As per store manager, he is aware of the complaint. <br /> Burritos consumed by the complainant is composed of eggs, sausage and pepper that come precooked and frozen and <br /> cheese slice. Precooked frozen eggs and sausage is brought to facility to be stored in the walk in freezer,thawed for 24 hours <br /> in walk in cooler(41 F)and then heated in microwave to be served. Cheese is received prepackaged to be stored in the walk <br /> in cooler.
