Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br /> OBSERVATIONS:The following temperatures were observed at the steam table: <br /> -Chow Mein was observed at 133 F <br /> -Adobo was observed at 134 F <br /> -BBQ pork was observed at 105 F <br /> Adjust steam table so potentially hazardous foods are maintained at a minimum of 135 F. Correct today. BBQ pork was <br /> removed from steam table. (REPEAT) <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #23 Rodents, Insects or Animals Inside Facility MAJOR <br /> OBSERVATIONS:Observed the following: <br /> -Large amounts of rodent droppings were observed through out the facility(retail shelves with noodles at the front of the <br /> store, under shelves against the southern wall, throughout the back storage area near the kitchen, between the walk-in <br /> cooler and freezer and on retail shelves of aisles 2-4) <br /> -Flies were observed in the meat department <br /> -A live cockroach was observed on the ground behind the fish tanks <br /> -Several dead cockroaches were observed on a sticky trap between the walk-in freezer and cooler <br /> Clean and sanitize areas and discard contaminated food items immediately. Increase pest control. Provide copies of pest <br /> control receipts to (baker@sjgov.org within one week. (REPEAT) <br /> CALCODE DESCRIPTION:Each food facility shall be kept free of vermin:rodents(rats,mice), cockroaches,flies.(114259.1, 114259.4, <br /> 114259.5) <br /> #21 Hot and Cold Potable Water Not Available <br /> OBSERVATIONS:The warm water at the women's restroom was observed at 88 F. Adjust warm water to provide a <br /> minimum of 100 F.
