Thaw food items under refrigeration, completely submerged under cold running water,the microwave oven or <br /> during the cooking process. Correct today. If fish are not thawing ensure they are stored with an adequate amount of ice. <br /> (REPEAT) <br /> CALCODE DESCRIPTION:Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br /> to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #27 Food Protected from Contamination <br /> OBSERVATIONS:Observed cardboard liners in the meat department walk-in cooler, main dry storage walk-in cooler and in <br /> the kitchen. Remove cardboard as they are not cleanable surfaces to protect food prep and storage areas from <br /> contamination. Correct today. <br /> The produce walk-in cooler fans were dripping condensation onto boxes of produce. Repair fans so that they are in good <br /> working order within two weeks. <br /> Self service tongs for fresh fish and Chinese donuts were observed with handles touching food items. Store tongs outside in <br /> cleanable containers to avoid cross contamination of food items. Correct today. <br /> The salt, sugar and MSG containers were observed with scoop handles stored inside the food items. Clean and sanitize the <br /> scoops and store in a cleanable container when not in use. Correct today. <br /> Fish tanks were observed with algae and cloudy water. Clean fish tanks within one weeks and maintain clean. <br /> CALCODE DESCRIPTION:All food shall be separated and protected from contamination. (113984(a,b, c,d, t), 113986, 114060, <br /> 114067(a, d,e,j), 114069(a,b), 114077, 114089.1 (c), 114143(c)) <br /> #33 Nonfood Contact Surfaces Clean <br /> OBSERVATIONS:The cooling fan cover inside the walk-in cooler had dust accumulation. Maintain fan covers clean to <br /> protect stored food items from contamination from fallen debris. Correct today. <br /> CALCODE DESCRIPTION:All nonfood contact surfaces of utensils and equipment shall be clean. (114115(c)) <br /> #35 Equipment/Utensils Approved and in Good Repair <br /> OBSERVATIONS:Observed ice accumulation in walk-in freezer.
