The ice machine <br /> was observed with a bucket inside the ice. Remove scoops/buckets,wash and sanitize, and store inside a cleanable <br /> container with handle facing up. Correct today. <br /> Observed cardboard liner on the bottom shelf of the table next to the fryer. Remove cardboard as they are not cleanable <br /> surfaces to protect food prep and storage areas from contamination. Correct today. (REPEAT) <br /> Observed an open bag of flour stored on the floor by the ice machine. Place and store all food items six inches off the floor. <br /> Correct today. <br /> CALCODE DESCRIPTION:Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br /> above the floor on approved shelving. (114047, 114049, 114051, 114053, 114055, 114067(h), 114069(b)) <br /> #34 Warewashing Facilites Maintained <br /> OBSERVATIONS:Quat sanitizing test strips were not available at the facility. Obtain Quat sanitizing test strips to ensure <br /> sanitizing solution has a minimum concentration of 200 PPM for proper sanitation of dishes, surfaces and utensils. Correct <br /> within seven days. (REPEAT) <br /> CALCODE DESCRIPTION:Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br /> materials shall be provided to measure the applicable sanitization method.
