Keep wiping cloths that may come into contact with food inside a bucket containing sanitizing solution when not in use. Correct today. All ice machines and bins,food preparation sinks,ware washing sinks(dish washing units),display cases and refrigeration units, and any other food service equipment which discharges liquid waste, shall be drained by means of indirect waste pipes discharged through an air gap into a floor sink or other approved waste receptor. Direct liquid waste lines from the ice machine to a floor sink with a minimum of 1 inch air gap. Correct withing two weeks. The hot water handle was missing from the back hand washing sink. Repair sink so that it is good working order. Correct today. CALCODE DESCRIPTION:The potable water supply shall be protected with a backflow or back siphonage protection device,as required by applicable plumbing codes.
